Leftover Low Fat, Low Calorie Creamy Garlic Chicken Pasta - GF




Hi, it's Jo Falkinder from An Easy Gluten Free Life here! It feels like I have been away from you guys for such a long time - I'm lucky if I manage one new recipe every three weeks at the moment, and I feel like I'm letting you down a bit with that. It's true that I have been re-assessing my work/life balance and have been taking more time to live, breathe, be. But- even with a better balance, I could still manage more than occasional posts most of the time. Unfortunately I haven't been 'well' with one thing and another since December and my CFS is currently on a whole new level! I think I may have set a new record for longest binge of Extreme Cake Makers lol! So, I'm afraid it will be a little slow for a few weeks yet, my body has been battered and bruised, so I'm going to take some time to heal BUT rest assured that more yummy recipes will be on their way. 


On the plus side, all this illness has reminded me just how important food is for our bodies - the quickest and most effective way to get the vitamins and minerals we need to stay healthy is to eat our fruit and veggies! Speaking of healthy meals...for a long time I have wondered why someone hasn't made a low calorie creamy Mushroom dish. For a long time I have wondered if it would have to use cream or similar...couldn't it use milk, or Quark, or both? Honestly, I have pondered this for years, so last week when I was craving creamy carby naughtiness - I put Quark on the shopping list and started experimenting! Thankfully, nothing curdled and nothing got weird - we just ended up with an indulgent, creamy dish that contains less than 500 kcals per portion! Hooray! This recipe is perfect for using up your leftover roast chicken from Sunday Dinner. It's super indulgent and super quick to make so go on, cheer up your Monday evenings with this little beauty.



Leftover Low Fat, Low Calorie Creamy Garlic Chicken Pasta - Gluten Free

Serves 2


* 200g Gluten Free Spaghetti

* 225g Chestnut Mushrooms, cut into chunks

* 1 handful roasted, torn chicken breast

* 2 medium sized garlic cloves

* 1 tbs parmesan plus extra for garnish

* 150g Quark

* Fry light Olive Oil Spray



* Bring a pan of water to the boil and add the spaghetti. Boil for 8-10 minutes

* Using medium heat, cook the garlic in a large frying pan for 30 seconds

* Slowly add the chestnut mushrooms and fry until they start to soften

* Add the torn chicken breast and ensure it is heated through

* Meanwhile, add 1tbs of parmesan to the Quark and mix well

* When the mushrooms, chicken and pasta are cooked, take the mushrooms/chicken off the heat and     allow to cool a little while you serve the pasta

* Mix the Quark into the mushrooms/chicken and serve immediately

* Garnish with extra parmesan and fresh parsley
